Bacon and tomato pasta
Ingredients
- 6 streaks of bacon
- Small tin of chopped tomatoes
- 1/2 teaspoon of crushed chillis
- Mixed herbs
- 1/2 (red) onion, chopped
- Serving of fresh pasta
- Cheddar cheese
Instructions
- Heat up a little olive oil, then add the crushed chillis and the bacon, chopped up
into pieces. Heat for 3 or 4 minutes, until bacon is sweating.
- Add the chopped onion, stir in, then cover on a low heat for 8-10 minutes.
- Uncover, add the herbs, then add the tin of tomatoes. Cook until the mixture is
sufficiently reduced, according to taste (in the order of 25 - 30 minutes).
- Cook the pasta, add the pasta then the mixture to a bowl, then grate cheese on top.
Season with pepper.
