Lamb Ragu
Ingredients
- Olive oil and butter
- 1/2 finely chopped onion
- A diced carrot
- Lamb mince
- Mint / mixed herbs
- Milk
- Pasta
Instructions
- Melt butter and oil and add the chopped onion and diced carrot. Heat through until soft.
- Add the lamb mince and keep stirring and heating until it's browned. Then add the herbs and
heat for a while longer.
- Carry out iterations of adding milk and then letting simmer, until the desired consistancy is
reached. Full fat milk is preferable. This stage can take a good 20 - 25 minutes or longer if
mushiness is aimed for.
- Prepare the pasta in a separate saucepan. Bring together at the end.
